Chocolate & hazelnuts: a classic but oh so perfect combination for those easy cookies.
For 10 small cookies:
– 100 g hazelnuts
– 10 g coconut flour (1 tablespoon, 15 ml)
– 20 g coconut oil (2 tablespoons, 30 ml)
– 20 g maple syrup (1 tablespoon, 15 ml)
– 1 egg
– 1 tsp vanilla extract
– ½ tsp baking powder
– 20 g unsweetened dark chocolate
Use a blender with a “S”-shape blade to make a powder out of the hazelnuts (I use a Nutribullet).
Melt the coconut oil in the microwave. Chop the chocolate into pieces. Mix all ingredients together. The dough is quite sticky. Distribute small piles of dough onto a nonstick baking sheet using a spoon.
Press the small heaps of dough into biscuits with slightly wet hands. Bake 10-15 minutes at moderate temperature (180 degrees Celsius) or until cookies are lightly browned.
