Here’s a simple chocolate pound cake made with chocolate-hazelnut spread.
– Version 2 uses regular ingredients in case you don’t have any access to a low-carb chocolate spread (though many low-carb spreads are available on Amazon). In that second version, I just used regular Nutella and regular buckwheat flour. The recipe is thus higher in sugar but still remains a relatively moderate treat: with all that Nutella, you really don’t need to add any sugar or butter to the batter.
Version #1: sugar-free chocolate pound cake
For 2 mini cakes 5 x 12 cm, or about 8 portions:
– 100 g Cavalier low-carb chocolate spread (for a softer cake, you can add a bit more, up to 150 g)
– 30 g hemp protein powder
– 30 g arrow root powder
– 2 tsp baking powder
– 2 eggs
In a food processor, blend low-carb chocolate spread and eggs. Add hemp protein, arrow root and baking powder. Pour batter onto silicon molds. Bake 15 minutes in a preheated oven at 200 degrees Celsius. The pound cake is cooked when a toothpick inserted into the center comes out clean.
Nutrition facts per slice: 98 kcal, 3.7 g protein, 7.1 g carbs, 1 g sugar, 6.1 g fat, 5.4 g fiber.
If you’re interested in the Cavalier hazelnut chocolate spread I bought, here are the macros for 100 g of paste: 37.6 g fiber, 6.6 g of sugar and 6.8 g of saturated fat.
(Normal Nutella contains 56.8 g sugar per 100 g.)
Version #2: “regular” ingredients (not low-sugar anymore)
If you are not the type that spends a fortune buying obscure ingredients, here is a simple recipe made from 4 basic ingredients. This cake is not “low sugar” anymore but remains relatively reasonable (a piece of this cake contains 10 g of sugar). Nutella being essentially composed of fat and sugar, no need to add any butter or sugar to this cake.
In a food processor, mix Nutella and eggs. Add flour and baking powder. Pour batter into silicone molds. Bake 15 minutes in a preheated oven at 200 degrees Celsius. The pound cake is cooked when a toothpick inserted into the center comes out clean.
