No-bake crispy treats with a salted caramel flavor. The ingredients needed for the caramel coating: ghee (clarified butter, a very little goes a long way) and rice syrup. Unlike sugar or regular syrup, rice syrup not only contains simple sugars (glucose, maltose), but also complex sugars (oligosaccharides) that are digested more slowly.
Melt syrup and ghee in a small pan. Once melted, remove from heat and add puffed quinoa, chia seeds and salt. Mix well, then divide and pack the mixture onto a silicone muffin pan. Let cool. Place in the fridge to firm up.
