Here’s a stuffed cookie idea I’ve made using a cake pop mold. This was just an experiment but it turned out pretty nice: these cookies held their shape very well, which made their chocolate surprise center a real ‘architectural’ success.

I made the cookie dough mixing all the ingredients together. I then pressed the dough onto the lower part of the cake pop mold, keeping one third of the dough aside to “close” the cookies once I would have poured the filling.
I made the filling and poured it into the cake pop mold. I then closed the cookie with a layer of cookie dough, making sure to press the edges so that no filling would come out.
I baked these cookies 10 minutes at 180 degrees Celsius.
I cut the ugly edges of the baked cookies with a knife to make them look prettier.
