These big cookies are almost too high in calories for publication on the blog! But I’ve still chosen to publish this recipe because it’s very nutritious and packed with wholesome ingredients: chestnut flour, kasha (roasted buckwheat), seeds and honey. One big biscuit makes an ideal energy-boosting snack on a cold winter day.
Mix dry ingredients (chestnut flour, kasha, seeds) together. Melt coconut oil and honey in a small saucepan. Add the honey-coconut oil mixture to the dry ingredients. Press the dough onto a sheet of parchment paper using baking molds to form the cookies.
NB: I used this kind of inox square molds and packed the mixture into the molds.
Bake 10 minutes at 180 degrees Celsius.
