A treat that comes with a surprise center: here’s a quick recipe for vegan post-workout protein balls that I found in a Fitness magazine:

Ingredients for the outer shell:
Mix dried apricots and lucuma powder in a blender. Roll this sticky dough to form small balls. Place on the side.
Mix the ingredients for the outer shell: in a bowl, mix rice protein, cocoa, coconut flour, water, maple syrup and coconut oil. The texture of the dough should be similar to modeling clay.
Cover each small apricot-lucuma ball with a layer of the rice protein modeling clay.
Rolls the balls in oatmeal. Place the balls in the fridge to firm up.
Nutrition facts per ball: 110 kcal, 7.4 g protein, 15.8 g carbs, 9.2 g sugar, 1.9 g fat, 1.5 g fiber.
