Zabaione is an Italian dessert made with egg yolks, sugar, and a sweet wine (usually Marsala wine). Here’s a simplified version using leftover egg yolks, brown rice syrup and vanilla extract, that I cooked in the microwave.
Whisk yolks, vanilla extract and rice syrup with an electric whisk. When the mix becomes pale and fluffy, place it for 10 seconds at 630 Watts in the microwave. Take it out and whisk again. Place it back for 10 seconds. Whisk again. Keep going for a few rounds until you get the desired consistency. Care not to overheat and curdle the mixture.
