Following my post “Baking with VitaFiber IMO powder“, here is another recipe experimenting with VitaFiber low calorie prebiotic fiber powder: flourless & sugar-free chocolate chip muffins. These muffins don’t look spectacular because they didn’t rise up very much, but they were still very fluffy and light, and delectable enough to be approved for publication on the blog!
Ingredients (for 6 small muffins):
– 1/4 cup VitaFiber powder (45 g)
– 1/4 cup pea protein (35 g)
– 1 tsp baking powder
– 2 eggs
– 1 tbsp oil (I used olive oil, coconut oil would certainly work too)
– 1/2 tsp vanilla extract
– 3 tbsp unsweetened choco chips (30 g)
I combined everything together and baked the muffins for about 15-20 minutes at 220 degrees Celsius.
Nutrition facts per muffin: 107 kcal, 7.3 g protein, 9.1 g carbs, 0.1 g sugar, 6.7 g fat, 7.8 g fiber.
Net carbs: 1.3 g if I apply the same logic as Atkins or Quest bars, making “net carbs” claims on their product packages by deducting the fiber from the total carb amount.
These are delicious either warm from the oven or at room temperature when they’re still fresh. However, when the muffins completely cool down in a cold environment, they tend to shrink and stiffen up.
The perfect excuse to share them and eat everything right away!
