Some simple grain-free pancakes using gari, a manioc flour I bought at my neighborhood’s Pakistani mini-market. It’s made from cassava tubers. It’s very neutral in taste and very cheap. You can prepare it just like couscous or oatmeal, just by putting boiling water on it. I’ve also used gari to make these gluten-free cookies.
These simple pancakes require only 4 ingredients.
Ingredients for 3 pancakes:
Mix everything together. Let the batter sit for 10-15 minutes in order for the gari to ‘soak’ a bit. Bake like regular pancakes.
It’s a nice recipe to ‘mix things up’ if you’re used to heavy pancakes made with coconut flour or almond meal. Gari is lighter and quicker to digest.
