I usually never post any microwave or mug cake recipe because they always fail to meet my expectations. Despite the gorgeous Pinterest pictures, what you usually get is a spongy, shapeless, sad-looking thing in a mug.
However, Jessica’s recipe was a pleasant surprise. The cake still does have a “microwave look & feel”, but feels very nutritious and filling. It’s a nice recipe in case of urgent craving.
Here is my adaptation of Jessica’s recipe:
– 2 tbsp finely ground flax seeds
– 2 tbsp hemp protein powder (The cake will probably taste better if you use a flavored hemp protein powder. I used an unflavored basic hemp powder I bought at the supermarket.)
– 1/4 tsp baking powder
– 1 tbsp cocoa
– 1 tbsp coconut sugar or Swerve
– 1 egg
– 2 tbsp almond milk (or water)
Mix everything together (dry ingredients first) and put in the microwave for 2 minutes 30 seconds at 900 Watts.
Nutrition facts for the whole cake (= 1-2 servings): 259 kcal, 16.7 g protein, 21.8 g carbs, 8.4 g sugar, 13.8 g fat, 9 g fiber.
