After dinner cravings sometimes ruin my whole day! I eat so well, but then I get these cravings for some kind of treat after dinner. My inner child throws a tantrum and doesn’t settle for a fruit as dessert. Or later, around 9 pm, I suddently feel like I need something crunchy to dip in my cup of herbal tea. These cookies are a solution I came up with. They’re made with carob powder instead of cocoa to avoid any kind of caffeine.
Ingredients for 10 cookies:
Mix everything together until it starts to form a dough. Mixing is a bit easier if you mix wet ingredients (almond butter, coconut milk, vanilla) together first.
You could also make some protein bars or protein balls out of the raw dough.
Since I’m craving something crunchy I can dip in herbal tea, I cut out cookies with a cookie cutter and bake them for 20 min at 180 degrees Celsius. It’s a bit of a pity baking them since 3 of the ingredients I use are raw foods (the Sun Warrior rice protein powder, the almond butter and the carob powder from Detoxyourworld.com). I guess raw food activists would say I’m totally denaturing the ingredients with the heat of the oven. You could also dehydrate these cookies instead of baking them if you have a dehydrator. Looking for dehydrators on Amazon.com, I was actually surprised many of them aren’t as expensive as I thought (30 dollars). But I just don’t have the space for another kitchen gadget in my small kitchen…
Nutrition facts per cookies: 52 kcal, 3.5 g protein, 2.5 g carbs, 0.7 g sugar, 3.2 g fat, 0.8 g fiber.
Yes, I know it’s always better to avoid any kind of late-night snacking, but at least these cookies have pretty reasonable nutrition facts :)
