I’ve lost my baking mojo :( I haven’t been lucky in the kitchen lately: I’ve been disappointed by two cauliflower recipes from my favorite blogs: Proteinpow and Healthful Pursuit.
First, I gave this protein bread pudding made of cauliflower a try: www.proteinpow.com/2012/09/is-it-protein-bread-pudding-is-it.html
I thought I just could not fail because I had all the necessary ingredients, even the same brand of rice protein powder Anna uses on her blog:
But still, the protein bread pudding tasted like cauliflower. It was eatable but it was certainly not magical like Anna described it. But then again, Anna poured maple syrup all over her cake. I didn’t because maple syrup tend to be one of my domino foods (meaning once I start I can’t stop and end up drinking it directly from the bottle…). I too will basically find anything that’s topped with maple syrup really tasty. But without maple syrup this protein bread pudding was kind of disappointing.
Second disappointing recipe of the week: this vegan lemon pudding from www.healthfulpursuit.com/2013/03/vegan-lemon-pudding. Like Anna’s, Leanne’s blog is one of my favorite. The pudding on her blog looks fantastic. And I believe you can get that luscious consistency if you have a powerful blender like a Blendtec or Vitamix. But with a cheap blender like mine, even if the cauliflower was overcooked and even if I did everything in my power to puree it enough… It wasn’t thick and luscious like a pudding but looked more like a kind of sad applesauce. The pudding didn’t taste of cauliflower (I followed the instructions: covered and refrigerated it overnight to help “the bold lemon flavor subside and really transforms this pudding”). But still, that pudding let a strange aftertaste and I let my boyfriend finish it. (He really isn’t picky at all…)
Sorry for this kind of rant about my disappointing experiments… Do you have any original healthy recipes that are guaranteed to bring great results?
