Inspired by Anna’s protein truffles in a box, I made some protein truffles and chocolates as a “Valentine gift in advance” for my boyfriend.
|The white coconut truffles are made of:
– 1/4 cup grated coconut
– 1/4 cup vanilla whey
– 3 tbsp coconut oil
– 1 tsp coconut extract
|The white chocolate crispies:
– 2 tbsp cocoa butter
– 1 tbsp almond milk
– 1 tsp vanilla extract
– 1 tsp stevia
– 1/2 cup puffed cereals
I told my boyfriend I don’t need any flowers or chocolates, but any gifts coming from Lululemon’s European webshop would be greatly appreciated…
And in case I still end up with a box of chocolates that pushes me away from my fitness goals, I have a pretty simple recipe to get rid of fatty/sugary chocolates without throwing them away:
– 200 g chocolates
– 5 egg whites
– 1 cup oats (100 g)
– a can of red kidney beans (250 g)
I blend oats, egg whites and kidney beans in a food processor. I melt the chocolates in the microwave, add them to the mix, and blend everything well one more time. I bake the mix for 20 min at 250 degrees Celsius.
This cake is still high in calories, but at least I eat less chocolate in one go since it’s ‘disseminated’ in the cake (and you end up with a pretty big cake, 8-10 portions). Combining the chocolates’ sugar and fat with protein, complex carbs and fiber helps reduce the sugar rush :)
Nutrition facts for one piece: 191 kcal, 6.8 g protein, 23 g carbs, 12 g sugar, 9 g fat, 4.5 g fiber.
