This is my first experiment with 2 new products I hadn’t tried before: cocoa butter and a vanilla-flavored rice protein powder. The end result reminded me a bit of a Nestlé Crunch chocolate bar! This is definitely not a low-calorie treat because of the cocoa butter, but it’s very low in sugar. (The rice protein is sweetened with stevia).
Ingredients for 2 bars:
– 3 tbsp vanilla rice protein (I used Sunwarrior classic protein)
– 3 tbsp cocoa butter
– 1 tsp cocoa (omit it to get a white chocolate bar)
– 1/4 cup puffed cereals or rice crispies (I used puffed millet)
Cocoa butter is basically 100% saturated fat, but it does contain vitamins E and K. And you can also use it to make home-made cosmetics for dry skin :) I guess that you could use coconut oil instead of cocoa butter to make a healthier recipe. But the point of using cocoa butter is to get something that’s extremely close to normal chocolate’s texture and taste.
I melted the cocoa butter in the microwave, combined it with the other ingredients and poured the mixture into a silicon mold.
Nutrition facts for a bar of 40 grams: 245 kcal, 8.4 g protein, 5.6 g carbs, 0.5 g sugar, 21 g fat.
Definitely not a low-calorie treat, but something that can be an alternative to a ‘normal’ milk chocolate bar packed with 25 grams of sugar.
