Chestnut Flour Paleo Cookies

These may be the simplest gluten-free cookies ever. 3 ingredients, 15 minutes and that’s it. They may look like dog biscuits but they definitely don’t taste like them!

Honey, coconut oil, chestnut flour

Ingredients (for 6 biscuits):

– 6 tbsp chestnut flour
– 1 tbsp coconut oil
– 1 tbsp honey (I use chestnut honey: any kind of a dark, flavorful liquid honey would work. I used chestnut honey for its strong aromatic taste.)


If the coconut oil is solid, place it 1 min in the microwave to melt. Mix the ingredients together in a large bowl. It’s normal for the dough to be sticky, but you should be able to make a ball out of it.

Put the dough on a piece of non-stick parchment paper on a large baking sheet. Put another piece of parchment over it. Roll out dough using a rolling pin directly on the piece of parchment. Take the upper piece of parchment off and cut out cookies with a cookie cutter.

Bake for 10 min at 200 or 180 degrees Celsius depending on cookies thickness.
