My favorite November post-workout meal: a thick, smooth, comforting and nutritious pudding made of chestnuts and whey.
Process everything in blender until smooth and creamy and enjoy:
Nutrition facts: 466 kcal, 31 g protein, 79 g carbs, 15 g sugar, 3 g fat, 7 g fiber.
Almost 80 grams of carbs and 15 gram of natural sugars from the chestnuts sound very high but the serving size you get using 15 whole chestnuts is quite substantial: I’d say you get about 1.5 cup of pudding. It could be halved if you don’t eat it as a post-workout meal. I’m pretty sure the other half could be put in the freezer to indulge in a chestnut ice cream later on.
NB: If the whey protein you use contains xanthan gum and if you have a very strong blender, you could possibly turn this pudding into a delicious fluffy mousse -if you keep blending a bit longer!
