Just a quick & easy treat with a sweet chewy surprise center :)
Ingredients (for 5 balls):
Chop figs and soak them in warm water for 2 hours. Remove excess water, place in a food processor and pulse to turn figs into a thick paste.
Mix Greek yogurt, almond flour and flavoring. It’s normal for the batter to be thick and sticky.
Roll fig mixture into balls, then roll the balls in the yogurt/almond flour mixture.
Bake for 15 minutes at 230 degrees or till golden.
