I discovered cashew burfee (cashew fudge) while shopping at my neighborhood’s Indian grocery store and I was amazed how something so simple could taste so good. It has only 2 ingredients: cashews and sugar, nothing else.
We do have some similar sweets in Europe: many European countries have some kinds of marzipan or almond paste similar to burfee. However, I have to admit that the cashews just take the whole thing to the next level compared to the same kinds of sweets made with almonds.
Although the ready-made burfee at the Indian grocery stores tastes delicious, it’s just way too high in sugar for somebody who’s inclined to get sugar-addicted or cannot practice moderation… So I decided to make my own sugar-free cashew burfee.
I mixed everything in a food processor:
I pressed it down in a dish and placed it for a few hours in the fridge.
Verdict: very nice! Of course, even if these treats are very low in sugar, they’re still calorie-dense taking into account the amount of cashews, but they’re totally worth it!
1 cup cashews and 1/4 cup vanilla whey protein powder make about 8 pieces.
Nutrition facts per piece: 108 calories, 6 g protein, 5.2 g carbs, 0.8 g sugar, 7.7 g fat.
