This dessert was inspired by a recipe of this Indian dessert called Lauki Halwa. My recipe probably has nothing in common with the real taste of the original recipe, but I chose to keep things extremely simple and healthy, and I wasn’t disappointed. This recipe has actually become one of my go-to recipes when I want to have a big dessert but keep it low in calories.
Ingredients for 1 serving:
– 1 medium zucchini
– 1 tsp ghee
– 2 tbsp Swerve
– 1 tsp vanilla
– optional: another food flavoring like caramel flavoring
– Spices of your choice: cinnamon & cardamom for example
– 1-2 tsp cocoa powder
Peel the zucchini and grate it. For this recipe, it’s better to peel the zucchini even if it’s organic because the skin can add some kind of bitterness that we don’t really need in a dessert recipe. Melt the ghee in a wide sauté pan (the pan should be large to be able to cook everything quicker). Add grated zucchini.
Once the zucchini looks transparent and starts releasing a lot of water, add all the other ingredients except cocoa. You can add some powdered milk and a tiny teaspoon of corn starch to give the recipe better texture (if you don’t mind the couple of extra calories). Serve warm and dust with cocoa powder.
