Having experimented with several hem protein cake recipes, I figured out that the only way to make a sweet recipe with this type of protein is to use lots of cocoa to counterbalance its taste.
I made many “cocoa-supercharged” experiments, but my most successful attempt still remains these hemp protein brownies.
To stop the cocoa overdose, I also came up with this savory muffin recipe that turned out pretty well.
Ingredients for 4 muffins:
I defroze the peas and spinach before measuring them. I mixed all ingredients together and baked the mix for 20 min at 230 degrees Celsius.
Nutrition facts for one muffin: 158 kcal, 14.2 g protein, 13.4 g carbs, 2.2 g sugar, 5.2 g fat, 5.5 g fiber.
These muffins are not a delicious sweet treat but come in handy as a snack on the go to eat more veggies.
