Discovery of the week: baking a mix of casein, baking powder and egg yolks results in a cake that strangely resembles choux pastry!
As a French woman, French pastries like choux (cream puffs) or éclairs are for me the equivalent of donuts for an American: a traditional symbol of temptation and a light, delicate, fluffy treat with a sneaky serious amount of calories.
These eclairs may not be as tender and creamy as real ones but they can be a credible substitute, a bit like an electronic cigarette for a smoker :)
Ingredients for the eclair dough (make 2 small eclairs or one big):
– 2 egg yolks
– 2 tbsp vanilla casein powder
– 1/4 tsp baking powder
– a pinch of salt
I’m not using the egg whites in the recipe. You can use them in a simple protein pancake or veggie frittata. If you’re a weight-training gal, I’m sure you don’t mind having leftover egg whites! ;)
Beat yolks with an electric mixer until they become a pastel yellow color (about 3 to 5 minutes). Add casein powder, salt and baking powder. Form a ball of dough using your hands.
Roll the dough into two small cylinders (or just one if you’re looking for one normal sized eclair).
Bake for 20 min at 200-220 degrees Celsius.

For the filling:
Mix all ingredients together and cook in a small saucepan until the mixture thickens and gets a nice creamy consistency. Cut the eclairs in half and fill with the pudding mixture. Real eclairs usually come with a shinny sugary glaze on top. As I didn’t want to add additional calories (and I was feeling a bit lazy), I just used the filling mixture to put on top as the glaze. But you could try to make a special mix for the glaze by mixing dry milk powder, cocoa and a tiny bit of agave or honey.
The light texture is quite similar to real choux pastry!

If the filling is made with skim milk: 250 kcal, 23 g of protein, 17 g of carbs, 6 g of sugar, 10 g of fat.
If the filling is made with unsweetened almond milk: 225 kcal, 19.5 g of protein, 11.5 g of carbs, 0 g of sugar, 11.3 g of fat.
