These protein bars are very crunchy. Honestly they’re also a bit dry but the big advantage is that you can keep them in a tupperware for several days without worrying about them going bad.

Ingredients (for 6 bars):
- 3 cups unsalted unsweetened popcorn
- 1 cup whey protein powder
- 1/2 cup coconut milk (I didn’t use reduced-fat coconut milk but I guess it should also work with reduced-fat coconut milk)
- 1/4 cup goji berries (or any other dried fruits)
It may be a good idea to soak the dried fruits you’re using in warm water before. This will prevent them from drying out too much when baking the bars which is what happened to the bars I made.
I made the unsalted/unsweetened popcorn by popping corn in the microwave. I then put the 3 cups of popcorn in a resealable plastic bag and crushed it with my hands to get smaller bits of popcorn.

I mixed the protein powder and the coconut milk together before adding the other ingredients to avoid lumps. I then added the other ingredients and put the mixture into a baking dish.

I baked the batter at 200 degrees Celsius for 15 minutes until it got golden-brown.

Estimated nutrition facts per bar: 182 kcal, 16 g of protein, 7 g of carbs, 2.5 g of sugar, 10 g of fat.

Interesting, I am assuming you use vanilla protein? or is it up to you?
Yes, I used vanilla whey protein, but unflavored protein would be fine too if you wanna skip the aroma and the sweeteners contained in the protein. The goji already add some sweetness.

So I was super excited to make this when I saw it at work yesterday and couldn’t wait to get home. I think I may have done something wrong thought because the consistency was like styrofoam… Any ideas on what went wrong?
Here is what I used:
- 3 cups plain yellow popcorn
– 1 cup Isopure whey protein
– 1/2 cup canned coconut milk
– 1/4 cup soaked golden raisins
Cooked at 390 degrees F for 20 mins
I pretty much followed the recipe to a T because I feel in love with your blog and figured you knew wayyy more than me lol I can’t wait to try something else :)

Hi Jessica, I’m so sorry this recipe was a disappointment for you!! Yes, these bars turn out very crunchy!
