These cookies are simple vegan cookies. Although I am not a huge fan of soy because of the whole “soy controversy” (many experts say to limit soy product consumption to two servings per week), I like baking with soy flour occasionally. Contrary to many other flours, it brings moisture to baked goods rather than drying them out.
Ingredients for 8 small cookies:
- 1/4 cup soy flour
- 2 tbsp almond butter
- 3 tbsp apple sauce
- spices and flavorings of your choice: I used cardamon, cinnamon, vanilla and melted-butter flavorings
Dried fruits or chocolate chips would be a nice addition to the recipe to make these cookies a bit fancier and sweeter.
I mixed everything together with a fork and baked the cookies for 20 min at 230 degrees.
