These cookies are not the leanest diet cookies because they’re very rich in peanut butter. However, they mainly contain good fats and protein and few carbs and sugar. They can be a healthy alternative for traditional buttery cookies. They’re ideal when you feel like you need a ‘real’ full-fat cookie but without the sugar high.
I don’t add any sweetener to the recipe because the vanilla whey protein I use is already sweetened with sucralose which is already way enough sweetness and artificial sweeteners for my taste.
Mix everything together in a bowl. You may want to mix wet ingredients (egg whites and peanut butter) together first to make mixing easier.
Roll dough, about 1 big tablespoon at a time, into balls.
Bake until cookies are golden and puffed, 20 minutes at 220 degrees Celsius.

Yes, they’re a bit fat but they’re not that big of a cheat meal if you eat only one or two with several cups of green tea :)
