A great way to use overripe mangoes!
For a small pie of 6 servings (the diameter of my pie pan was 16 cm – 6.3 inches):
– 1 pureed mango (around 220 g puree)
– 2 egg yolks
– 1 tbsp coconut flour
– flavoring of your choice: cardamon, vanilla extract, coconut flavoring etc.
– 1 pureed mango
– 1/3 cup water
– 1 tsp of agar-agar (or quantities according to the instructions on the package)
Mix the ingredients for the crust. Bake the crust first, around 10 min at 220 degrees Celsius or until golden brown.
Mix the ingredients for the filling, pour over the crust, and bake for about 20 minutes at 220 degrees Celsius. Let the pie cool down.
Prepare the mango glaze : bring the agar-agar and water to a boil for 3 min. Let cool a bit, then add the pureed mango. Pour on top of the pie. Allow time to firm up. Place in the fridge and serve cold.
