– 1 cup ground almonds
– 1/4 cup dried fruits of your choice (unsweetened cranberries are the dried fruits with the lowest sugar content)
– 1 to 2 tbp honey (quantity to your own taste)
– 1 egg
– 2 tbsp almond milk
– 1 tsp vanilla extract
Combine all ingredients together. Dough must be a bit sticky but firm enough to knead with your hands.
Shape dough into flat balls and place on a cookie sheet. These cookies are not going to spread much in the oven.
Bake for 20-22 minutes at 375 degrees Fahrenheit / 200 degrees Celsius or until golden.
Love the texture! Chewy outside, tender inside.
