Ingredients for 6 cakes:
– 1 cup unsweetened apple sauce
– 1 banana
– 1 teaspoon vanilla extract
– 1 egg
– 1 tablespoon honey, or your favorite sweetener to your own taste
– 1 cup (100 g) whole wheat flour or oat flour
– 1 scoop (1/4 cup) vanilla or chocolate protein powder
– 1/4 cup of cocoa
– 1 teaspoon baking powder
– 1 teaspoon salt
Mix wet ingredients (egg, baby food, honey, vanilla, mashed banana) together. Mix dry ingredients (flour, baking powder, salt, cacao powder, protein powder) together. Mix everything together.
This is how the batter looks like.
I baked the cakes for 20-25 minutes at 230 degrees Celsius. I checked for doneness with a toothpick.
For the frosting, I made a chocolate pudding from a previous post: “low sugar chocolate pudding“.
I cooked the pudding with a little bit less milk than normal to make it thicker.
I let the pudding cool down and put it in the fridge for 2 hours before putting it on top of the cakes.
These cupcakes are very dense and “heavy on the stomach”, but they’ll stop any chocolate cravings right away!
